Production zone: Commune of Brisighella
Grape Variety: Sangiovese di Romagna
Harvest: manual, from selected vineyards.
Pressing and vinification: rasp-pressing of the grapes, red vinifiocation using automatic submerged-cap vinification units, control of fermentation temperature 28°C, maceration lasting approximately 100 hours, drawing off, separation of the fermentation less, malo-lactic fermentation, filtration, stabilisation, sterile cold-bottling.
Alcohol content: 12.5%
Organoleptic characteristics: ruby red colur with clear, violaceous reflections. Finely intense bouquet with floral aspects evoking violets, slightly spiced, fine and on the whole harmonic. Elegantly structured taste, faily tannic and dry but harmonious with a clear persistent aftertaste.
Storage : bottled and stored in cool cellars away from sunlight.
Serving hints: excellent with tagliatelle, grilled and roast meats
