Sparkling white wine
Production zone: Commune of Brisighella.
Grape variety: Chardonnay.
Harvest: manual, from selected vineyards, just before full grape ripening.
Pressing and vinification: soft-membrane grape pressing, cold decanting of the must, separation of deposits, controlled-temperature fermentation of the clear must using only selected yeasts.
Alcohol content: 11%.
Organoleptic characteristics: straw yellow with greenish reflections, clear, vivacious but not excessively so, with fine and persistent pelage, fresh and fragrant of good olfactory intensity, pleasurable on the palate with well balanced acidity and alcohol content. Fairly persistent flavour with a dry aftertaste.
Storage: bottled and stored in cool cellars away from sunlight.
Serving hints: excellent as an aperitif, with fish antipasti, white meats.
