Extra virgin Olive - "Nostrana di Brisighella" 100%


Type: extra virgin olive oil, Denominazione di Origine Protetta (Protected Origin Classification).
 
Variety: 100% “Nostrana di Brisighella”, from olive groves in the approved production zone, registered and certified at the Chamber of Commerce of the Provinces of Ravenna and Forlì.
 
Geographical location of olive groves: hills surrounding Brisighella, olive groves specially selected according to productive and plant pathology aspects.
 
Harvest: from 5th November to 20th December: Milling must take place within 4 days of the harvest: this is compulsory. Harvesting is done manually by stripping the leaves, with the aid of various tools. The nature of the terrain does not allow for use of any mechanised machinery.
Delivery/transport is only permitted in the special crates and boxes which keep the fruit aired.
 
Extraction: the extraction system employs the Sinolea-Rapanelli trickle method. Yield is very low as extraction is partial and does not exceed 12%.
 
Organoleptic chemical characteristics: these aspects have been the key to our success ever since 1975: Since 1997 the oil has been D.O.P. certified, guaranteeing absolute quality in every way from the olive grove to final bottling.
 
Featuring exclusive, recognisable characteristics, the aroma is intense and delicate with aspects that bring to mind green artichokes and just-cut grass. Fluid on the palate, the sweet-sour and spicy flavours achieve near-perfect balance and harmony.
Acidity: max 0.20%, data shown on label.
 
Serving hints: excellent with all types of fish (especially mullet, turbot and sea bream), but gives of its best when added to and mixed a crudo (i.e. when cooking is over) with the cooking fluids of fish, meat and game where it expresses its full flavour.
